 PROTEINS ARE MOST FAMILIAR IN EVERYDAY life as something we eat. If you open your pantry, you will see the protein content of breakfast cereals, tuna fish, and virtually every other food item printed on a nutrition-fact label on the side of its packaging. When we eat protein, our body breaks it down into components and reconstructs the parts into new proteins that keep our cells running. We build these proteins to help us survive—and we would not be alive without them—but they can also put our brains on the fritz
