"1. Low-return vegetables are vegetables that don’t have a rich nutritional profile. They are healthy for you but won’t have the biggest impact on your diet. Low-return vegetables include: celery, cucumbers, eggplant, green beans, iceberg lettuce, olives, onions, radish, spaghetti squash, sweet corn (you can skip it altogether), tomatoes, turnips, and white potatoes (you can skip them, too).


 2. High-return vegetables are vegetables that have a diverse nutritional profile. They should form the majority of your diet. High-return vegetables include: arugula, beans, bell peppers, broccoli, Brussels sprouts, cabbage, carrots, cauliflower, collard greens, green peas, kale, leeks, lentils, microgreens, quinoa, romaine lettuce, spinach, sprouts, Swiss chard, and turnip greens. 3. For the maximum benefits, your diet should be varied. Pick at least 5 vegetables from the high-return list, but don’t be afraid to eat low-return vegetables, too (except for the ones that may have more drawbacks than benefits like white potatoes).
