Authentic Tibetan Thukpa Recipe (Noodle Soup) 🥢🍜

🛒 Ingredients:
For the Soup Base:
- 2 tbsp oil (vegetable or sesame)
- 1 large onion, sliced
- 4-5 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, chopped
- 1 tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1 tbsp soy sauce
- 1 tsp garam masala or Tibetan spice blend (if available)
- Salt and pepper to taste
Veggies & Protein:
- 1 carrot, julienned
- 1 cup cabbage, shredded
- 1 bell pepper, sliced
- 1 cup mushrooms, sliced (optional)
- 1 cup cooked shredded chicken, tofu, or beef (optional)
Noodles:
- 200g wheat or rice noodles (fresh or dried)
Toppings (optional but delicious!):
- Fresh coriander/cilantro leaves
- Spring onions, chopped
- Squeeze of fresh lime
- Chili oil for heat
🍲 Instructions:
Prepare the Noodles:
- Boil noodles according to package instructions, then drain and set aside.
Make the Soup Base:
- Heat oil in a large pot. Sauté onions, garlic, and ginger until aromatic.
- Add chopped tomatoes and cook until soft and pulpy.
Spice It Up:
- Stir in turmeric, chili powder, garam masala, and soy sauce. Cook for 2-3 minutes until fragrant.
Add Veggies & Protein:
- Toss in carrots, cabbage, bell peppers, mushrooms, and protein of choice. Stir-fry for a few minutes.
Add Water/Broth:
- Pour in 4 cups of vegetable or chicken broth. Simmer for 10-15 minutes. Adjust salt and pepper.
Assemble the Thukpa:
- Place noodles in serving bowls. Ladle hot soup over the noodles.
Garnish & Serve:
- Top with fresh coriander, spring onions, a squeeze of lime, and a drizzle of chili oil.
🔥 Tips:
- Add a boiled egg for extra protein.
- For a smoky flavor, add a dash of smoked paprika.
- Want a thicker broth? Add a teaspoon of cornstarch mixed with water.
